It’s incredible how such a small ingredient can cause so much confusion in the kitchen. If there's one thing Anjalina has noticed over the years about people who are starting to cook and even those who already know how to cook, is that all their spice jars are full, and also out of date. They get excited about all the colors and aromas, but in the end, they are not sure how to use them.

In addition to color and aroma, spices have health benefits such as nutrients and antioxidants. Ancient healing traditions such as Ayurveda and traditional Chinese medicine have used herbs and spices for centuries. Most Indian recipes basically use spices in an Ayurvedic way, making the most of the healing properties, but also imparting a lot of flavor.

Anjalina introduces us to the world of Indian cooking, a culture with a long tradition of spices, in a fun and educational way to help you forget your fears and dare to use more and more spices in your dishes.

What you'll learn

You will learn the properties of the most popular spices, how to cook them and how to use them in different dishes.

In this online course, Anjalina will introduce the main spices so that you can identify them and learn about their culinary and nutritional properties. 

You will then learn how to buy them, how to preserve them and the most common ways of cooking them.

To help you learn how to use them in a fun way, Anjalina has designed 2 delicious menus, with sweet and savoury dishes, starters, main courses, breakfasts, snacks... In each of these recipes, all vegetarian, Anjalina will use different combinations of spices, as well as different methods. The result will be colourful and delicious dishes, with new flavours and aromas that will surely encourage you to continue using the treasures that are spices.

Anjalina Chugani

Anjalina Chugani considers herself a passionate and emotional cook, connecting strongly with her Indian roots. A citizen of the world, she has lived in London, and Bangalore, has spent numerous summers in Manila and now resides in Barcelona with her family. She has travelled far and wide to connect with her family and believes that the best education is travel. Her recipes come from memories of the flavours and smells of her mothers' and grandmothers' kitchens. She studied at Hofmann Culinary School for two years and then decided to dive into teaching Indian cuisine, organising private events as well as advising restaurants, developing recipes for them and training their staff. During her cooking classes, the idea for Soul Spices was born. Her first cookbook is based on the benefits and properties of spices. She taught cooking courses showcasing Indian cuisine, spices and lifestyle and more recently Ayurvedic recipes. Recently, Anjalina has been specialising in Ayurveda because of the need for a change in her lifestyle and diet, as she has persistent digestive problems. Going back to her origins, she discovered that this science of life, Ayurveda, was not only going to be beneficial for her body, but also for her mind. Anjalina is currently undertaking the Ayurveda Diet and Lifestyle diploma course at Ayurveda Pura in London and is practising Ayurveda while continuing her work as a consultant and cook. She has also launched a new Instagram page: @soulveda_kitchen, where she shares her knowledge to help you on the path to a more holistic life. Her passion lies in all things Indian, and her love for her culture shines through as she talks about her country and its delicious variety of food and ingredients.
