In this course, chef Paolo Casagrande, the first chef to obtain 3 Michelin Stars in the city of Barcelona and under the direction of Martin Berasategui, opens the doors of Lasarte restaurant and teaches us some of its techniques and creations. By means of 10 original recipes you will learn to prepare an exquisite tasting menu using the secrets of an experienced, knowledgeable and revolutionary kitchen which uses locally sourced and regional products.
Paolo Casagrande shows us the essence of his cuisine, its techniques and blends, so that you can create your own dishes and menus. All his creations are made with different elements and products by means of unique processes that enable the preparation of original recipes that the Italian chef uses in his day-to-day life.
The tasting menu that we present has 4 snacks and 6 dishes, combining different textures such as air, gel, fake pil pil and crisp. You will also be able to discover new flavours with top-of-the-range products such as sea anemones, lobster, Carabinero prawns, King fish, oysters or loin of venison.

Paolo Casagrande was born in Italy, very close to the sea that today provides him with his best jewels for the kitchen. He grew up in Susegana, a town in Veneto with a great Mediterranean culture. The Italian Chef did his initial training at the Alfredo Beltrame Hostelería School while he worked to discover new techniques and test his creativity in a self-taught way. He worked in different restaurants in countries such as Italy, England and France with the aim of learning about international gastronomy and working alongside great chefs such as Alain Soliveres. A great influence in his life was Martín Berastegui, whom he met in 2003 and thanks to Paolo’s great capacity for work, Martin placed him in charge of the renowned MB restaurant at the Ritz-Carlton, Abama (Canary Islands) where he won the first Michelin star for the restaurant. After their reunion in 2012, Berasategui gave his gastronomic spirit an opportunity to flourish and lead the kitchen at Lasarte restaurant in Barcelona. His genius, commitment, coherence, perseverance and passion for cooking were some of the values that Berasategui saw in him. Since February 2016, Paolo has been in charge, under the direction of Berasategui, of all the gastronomic projects including the Monument Hotel, the new Hotel de Gran Lujo, which houses the Lasarte Restaurant, Oria Restaurant and Hall0 Cocktail Bar.
