Join in this educational Greek culinary tour and discover Greece from your kitchen

In this course, Irini will provide an overview of Greek cuisine, following the traditions of Ancient Greek and Byzantine cuisine, while also incorporating Middle Eastern, Balkan and Italian influences.

Greek cuisine is not spicy but the kitchen is always filled with an amazing aroma due to fresh herbs that are used, such as bay leaves, basil, rosemary, thyme and oregano, and also lemons, great red wine vinegar (often home made), and sweet spices such as cinnamon, cloves and nutmeg.

We will touch on the major food groups and key elements from which many dishes are made, before we encounter examples of some of the most iconic Greek dishes. This will include the popular street food dish, souvlaki, a selection of meze, ideal for sharing, and many other dishes that you will enjoy cooking.

This course is intended to inspire you to discover more, and perhaps experiment with Greek flavors and ingredients.

What you'll learn

The gastronomic culture of Greece: traditional dishes and essential ingredients

Irini likes to eat and share dishes that are rooted in tradition, using quality fresh ingredients, that are organic or homegrown wherever possible, but cooked in a cleaner, more contemporary way to reflect how we eat in the 21st century.

This course is divided into 8 sections, and each one includes examples of how a typical product is commonly used. The most elementary techniques will also be reviewed.

At the end of this course, you will be acquainted with the philosophy behind Greek food, and you will know how to make classics such as pita bread, stuffed tomatoes, baked giant beans, and red mullet savoro.

This course is intended for anyone who is interested in Greek food and Mediterranean cuisines.

Irini Tzortzoglou

When Irini Tzortzoglou became the UK MasterChef Champion in 2019, she was described by the judges as, ‘Taking the food that she knows from Greece and putting it into a modern context – that’s what Irini does and it’s stunning! Every time she cooks, it’s from the heart!’ Her passion for the best classical Greek food started in the kitchen of her grandmother’s village house where the building blocks of the meals which fed family, friends and visitors came straight from the fields. Over time, Irini’s food became increasingly refined although her devotion to fresh ingredients and organic produce remained. The result is a portfolio of dishes ranging from the simple to the complex, but always bursting with sun-soaked flavors, and featuring gorgeous presentations. After her MasterChef triumph, Irini published her first book ‘Under the Olive Tree: Recipes from my Greek Kitchen’ and subsequently became an Olive Oil Sommelier. She also offers fine dining experiences (which reflect all that is good about modern Greek cuisine), culinary retreats in Greece, and olive oil tastings focussing on the variety of oils available nowadays to selective users. Irini is also regularly invited back to be a food critic on the MasterChef UK television programme. “I am so proud to be able to demonstrate to the world that Greek food is so much more than the limited menu of basic dishes which most visitors to our country experience when visiting tavernas which serve the tourist market” she says. “We have a unique style with a strong traditional culture that has evolved over the years with Middle-Eastern and Western-European influences. And of course our food is the perfect example of the Mediterranean diet which is recognized as being one of the healthiest in the world!”

I really enjoyed this course and found it very inspirational! In the West, we get so much modified Greek cuisine that is nothing like what I remember when visiting Greece many years ago, so it was great to be reminded about the values and philosophy behind real Greek cuisine and to learn about the amazing ingredients and gorgeous combinations of flavours it features. Highly recommend!
